Inspiration for Ricotta Waffles

Every time I think about waffles, it brings me back to my childhood when I enjoyed going to breakfast diners with my parents and grandparents. It was pretty much the only time I enjoyed waffles that weren’t Kellogg’s Eggos (which I very much enjoyed, but homemade is always going to be better). My mom did make waffles as a treat, but she had a fancy Belgium waffle maker that was a little complicated to use, so we rarely had homemade waffles.

Shortly after I got my first apartment, I bought a Cuisinart Classic Waffle Maker (not sponsored), and it has served my breakfast purposes for over a decade. I have experimented with several waffle recipes, and this one is currently my favorite.

Ricotta Cheese

I typically make waffles with whatever dairy I have available (buttermilk, sour cream, or even creme fraiche). Ricotta, however, is my favorite to use because it makes the batter less “bready” and more cake-like. It also adds another level of buttery flavor.

I normally serve these waffles with a generous dollop of Blueberry Compote or Strawberry Raspberry Jam. Our favorite syrup to eat with these is Mom and Pop’s World’s Best Vermont Maple Syrup. Their infused varieties are exceptional. We treat ourselves to the raspberry infused and bourbon infused syrups once a year. Other times, we like Michele’s Maple Crème Syrup, or maple syrups from Trader Joe’s.

Serve with Scrambled Eggs and your favorite bacon and sausages.

Ricotta Waffles

Prep Time 15 minutes
Cook Time 25 minutes
Servings 6 people

Ingredients

  • 3 ¼ cups (300g) self-rising flour
  • ½ tsp (2g) baking soda
  • 2 large eggs
  • 1 ½ cups (352ml) whole milk
  • ½ cup (100g) ricotta cheese
  • 4 tbsp (60g) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 2 tbsp (30g) cane sugar

Instructions

  1. In a large bowl, whisk together the flour, sugar, and baking soda.
  2. In a separate bowl, whisk together the eggs, milk, ricotta cheese, and vanilla. 1/3 at the time, add the liquid to the flour mixture and mix until fully incorporated. Mix in the vegetable oil until combined, but still lumpy.
  3. Let the waffle batter rest for at least 10 minutes; this will help the baking soda create bubbles to raise your waffles.

  4. Follow the instructions and settings on your 7 inch waffle iron. Spray the waffle grid with nonstick spray and pour 1/3 to 1/2 cup of batter into the center of your iron. Close it and cook the waffle for 4 to 6 minutes, or until the waffle is golden brown.

  5. Repeat spraying the iron grid, pouring the batter into the iron, and cooking for 4 to 6 minutes until all of the batter has been used up.

  6. Batter makes 8 to 10 waffles.
