Ricotta Waffles

Ingredients

  • 3 ¼ cups (300g) self-rising flour
  • ½ tsp (2g) baking soda
  • 2 large eggs
  • 1 ½ cups (352ml) whole milk
  • ½ cup (100g) ricotta cheese
  • 4 tbsp (60g) vegetable oil
  • 1 tsp (5g) vanilla extract
  • 2 tbsp (30g) cane sugar

Instructions

  1. In a large bowl, whisk together the flour, sugar, and baking soda.
  2. In a separate bowl, whisk together the eggs, milk, ricotta cheese, and vanilla. 1/3 at the time, add the liquid to the flour mixture and mix until fully incorporated. Mix in the vegetable oil until combined, but still lumpy.
  3. Let the waffle batter rest for at least 10 minutes; this will help the baking soda create bubbles to raise your waffles.

  4. Follow the instructions and settings on your 7 inch waffle iron. Spray the waffle grid with nonstick spray and pour 1/3 to 1/2 cup of batter into the center of your iron. Close it and cook the waffle for 4 to 6 minutes, or until the waffle is golden brown.

  5. Repeat spraying the iron grid, pouring the batter into the iron, and cooking for 4 to 6 minutes until all of the batter has been used up.

  6. Batter makes 8 to 10 waffles.
