Oven Roasted Mushrooms with Herbs

One of my favorite nutritious sides is a hefty serving of oven roasted mushrooms made with homegrown herbs and good quality olive oil.

In the winter I tend to use dried Italian seasoning that can be found in supermarkets, but I’ll use homemade Fresh Italian Seasoning for the rest of the year.

Fresh Italian Seasoning

For incredible flavor, I love to season these mushrooms with a generous amount of smoked salt. Alderwood smoked salt is my favorite, but you can use any variety of smoked sea salt, or just regular sea salt if you can’t find any. The fresh herbs are a combination of chopped fresh thyme, oregano, parsley, and rosemary. You can play around with the ratios according to your taste. Do you love rosemary? Use more of it! Can’t stand oregano? You’re allowed to omit it!

As for what kind of mushrooms to use, use whatever mushrooms are available to you. The most commonly sold ones in the States are baby bellas and white mushrooms. When available, I like to be creative and use locally grown or specialty mushrooms such as oyster mushrooms and lion’s mane. You can also use shiitake mushrooms, porcini, or cremini.

Oven Roasted Mushrooms with Herbs

Prep Time 10 minutes
Cook Time 25 minutes
Servings 4 people

Ingredients

  • 30 oz whole mushrooms
  • 3 tbsp olive oil
  • 6 tbsp Fresh Italian seasoning, or 3 tbsp dried Italian seasoning
  • 2 tbsp garlic powder
  • salt and pepper to taste, use smoked sea salt for a delicious, smoky flavor

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. If the mushrooms have leftover soil on them, gently wipe them clean with a paper or cotton towel.

  3. Place all of the ingredients in a large mixing bowl and toss them up until the mushrooms are evenly coated with oil and seasoning.

  4. Place the mushrooms onto a baking sheet lined with parchment paper or a silicone mat.

  5. Roast the mushrooms for 30 minutes.

  6. Serve with your entrée or enjoy alone!
