Inspiration for Coconut Cooler Recipe

This is inspired by the discontinued beverage at P.F. Chang’s, an Asian-American fusion cuisine restaurant chain. It was a simple mixture of coconut milk, cocoa water, and cane sugar. My interpretation can use any sweetener and a splash of coconut flavor or rum for interest.

You can use whole coconut milk instead of light, but you’ll have to chill it and strain out the coconut oil chunks. To avoid this extra step, I recommend using the light version.

Fresh coconut can be used as well. Just be mindful that it is not always the easiest to open, and requires the extra step of making the coconut milk first.

This drink pairs well with my Vegan Mung Bean Lentil Curry, Slow Cooker Coconut Shrimp Curry with Lemongrass and Turmeric, and Chicken with Sweet Cashew Sauce. The Coconut Cooler complements these tropical dishes.

Flavor with any variety of sugar

Any variety of sugar can be used to sweeten this beverage. You can use honey, but please note that it’s not vegan if you’re aiming to make a plant-based beverage.

Maple sugar or syrup, coconut sugar, stevia, or any sweetener can be used. If using stevia or a sugar-free sweetener, start with 1/4 cup instead of 1/2 cup before adding more from there. Stevia can be quite potent.

My personal preference is wildflower honey for its strong fruity, earthy, and floral notes, or golden rod honey for its buttery, spicy, and pungent notes.

Coconut Cooler

Ingredients

  • 3 1/2 cups (800ml) light coconut milk
  • 5 cups (1040ml) coconut water
  • maple syrup, agave nectar, coconut sugar, or date sugar, to taste
  • Optional 2 tbsp coconut flavoring
  • Optional coconut Rum to taste

Instructions

  1. In a large pitcher, mix together the light coconut milk, coconut water, and sugar of your choice with a whisk until fully dissolved.

  2. Adjust the amount of sugar to your taste. Start with 1/2 of a cup of sugar, and adjust from there.

  3. If using, stir in the coconut flavoring and/or coconut rum.

  4. Keep the Coconut Cooler in the refrigerator for up to 7 days.
