While shopping for my usual groceries one day, I found that my local market sold Impossible Burger in the produce section. I instantly wanted to create vegan chili with it. I had tried it once months ago, and I was surprised at how savory and meaty it was.

This vegan chili became one of my favorite easy recipes as I adjusted to my new responsibilities and schedule. It only requires 8 ingredients: Impossible burger, a can of fire roasted tomatoes, a can of red kidney beans, fresh garlic, yellow onion, a green bell pepper, Mexican or taco seasoning, and cilantro. Using canned beans and tomatoes cuts down on preparation time without making the dish taste less fresh. The garlic, onion, and bell pepper add a splash of flavor, and any Mexican inspired dry seasoning brings the Impossible meat to life. Top the chili with your favorite vegan cheese and chopped cilantro, and serve with rice. Sometimes I like to eat it with homemade guacamole.

Do I Have To Use Impossible Meat?
There are so many substitutions that can be used if Impossible meats are not your forte. One of my favorite store bought options is Trader Joe’s Meatless Meatballs. You can also replace the meat with 12 ounces of roughly chopped portobello mushrooms or black beans.
What if you would rather use ground beef, bison, chicken, or turkey? Feel free to do so! Substitute any of your favorite proteins and top your chili with queso or a Mexican cheese blend, and a side of sour cream or Mexican crema.
Feel to also make this recipe completely fresh. I use canned beans and tomatoes out of convenience, but cooked dry beans and oven cooked fresh tomatoes are super satisfying.

Impossible Vegan Chili
Ingredients
- 12 oz Impossible burger, or 12oz of your choice of meat or chopped mushrooms
- 14 oz diced fire roasted tomatoes
- 15 oz red kidney beans
- 5 garlic cloves
- ½ yellow onion
- 1 green pepper sliced
- 3 to 4 tbsp Mexican or taco seasoning, or 2 tbsp cumin, 2 tbsp paprika, and 2 tsp Acho chili powder to taste
- optional: cilantro chopped
- salt to taste to taste
Instructions

In a large skillet, heat a tablespoon of vegetable oil and add the Impossible burger or your choice of vegan or vegetarian protein. Cook and chop the ground meat on medium heat for 3 to 5 minutes until half of the meat is cooked.

Add the chopped garlic, sliced onions, and sliced green pepper. Season with salt and pepper and stir. Cook the contents undisturbed for 2 minutes. Stir and cook for another 2 minutes.

Add the beans (bean water included), the tomatoes, and the taco or Mexican seasoning or cumin seasoning mixture. Stir and allow the chili to simmer on medium to low heat for 5 minutes. Season with salt to taste, and stir well.

Top with chopped cilantro and enjoy!
