Fall is such a wonderful season since you can find some of the most interesting squash varieties during this time of year. One of my favorites is delicata squash―a cylindrical shaped gourd with characteristic green stripes.
Delicata squash is entirely edible. When roasted, the skins are tender and the flesh is buttery and sweet. Serve it with a plate of roasted chicken or turkey.

Oven Roasted Delicata Squash
- 3 delicata squash
- 2 tbsp vegetable oil
- salt and pepper to taste
Preheat your oven to 425°F (220°C).
Wash the squash and cut 1 inch off each end. Slice each squash in half lengthwise and thoroughly scoop out the seeds with a spoon.
Slice each piece of squash into to 3/4 inch semi-circular strips.
In a large mixing bowl, toss the sliced squash pieces with 2 tbsp of vegetable oil and salt and pepper to taste.
Bake the squash for 35 minutes, or until caramelized and browned. Serve as a side.
