Oven Roasted Delicata Squash

Ingredients

  • 3 delicata squash
  • 2 tbsp vegetable oil
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the squash and cut 1 inch off each end. Slice each squash in half lengthwise and thoroughly scoop out the seeds with a spoon.
  3. Slice each piece of squash into to 3/4 inch semi-circular strips.
  4. In a large mixing bowl, toss the sliced squash pieces with 2 tbsp of vegetable oil and salt and pepper to taste.
  5. Bake the squash for 35 minutes, or until caramelized and browned. Serve as a side.
