Preheat your oven to 425°F (220°C).

Wash the squash and cut 1 inch off each end. Slice each squash in half lengthwise and thoroughly scoop out the seeds with a spoon.

Slice each piece of squash into to 3/4 inch semi-circular strips.

In a large mixing bowl, toss the sliced squash pieces with 2 tbsp of vegetable oil and salt and pepper to taste.

Bake the squash for 35 minutes, or until caramelized and browned. Serve as a side.
