Black Bean Burgers with Mushrooms and Peppers

Ingredients

  • 3 large eggs
  • 3 15 oz cans (1317g) black beans, drained
  • 1 red bell pepper, diced
  • 5 oz (142g) baby bella mushrooms, sliced
  • 6 garlic cloves, chopped, or 3 tbsp garlic powder
  • 6 oz (170g) panko bread crumbs
  • 3 tbsp vegetarian Worcestershire sauce, or soy sauce
  • salt and pepper to taste, preferably smoked salt
  • hamburger buns and toppings for serving

Instructions

Make the black bean base

  1. Whisk the eggs in a large mixing bowl.

  2. Add the drained black beans, peppers, mushrooms, garlic, bread crumbs, and Worcestershire sauce. Season with salt and pepper to taste.

  3. Using a silicone spatula, mix all of the ingredients until the black bean mixture is thick and binds together.

Cook the black bean burgers

  1. Heat 3 tbsp of vegetable oil in a large skillet.

  2. Using a large 5oz ice cream scooper or soup ladle, scoop four heaping mounds of black bean burger onto the skillet.

  3. Use the spatula to press the burger down and reshape into a patty if necessary.

  4. Cook burger on each side on high heat for 7 to 8 minutes. If the burger will not release from the skillet, cook for an additional 1 to 2 minutes before flipping it over.

  5. Remove the burgers from the skillet and set aside in a warm place. Repeat the cooking process to use up the rest of the black bean mixture.

Assemble the burger

  1. Assemble your burger with your favorite bun and toppings.
