Sujeonggwa (Korean Cinnamon Tea)

  • 8 Cups (1900ml) Water
  • 12 Cinnamon Sticks
  • 6-8 Inches Fresh Ginger
  • 3 Tablespoons (45g) Molasses
  • Honey or Sugar to taste


  1. Roughly cut the fresh ginger into 1 inch to half inch sized pieces. 

  2. In a large pot, bring water to a boil. Add the ginger pieces and cinnamon sticks and bring down the heat to a very low simmer. Steep ginger and cinnamon for 1 hour or until liquid has reduced by half. This could take more hours.

  3. Take tea off the heat and let cool for 5 minutes. Add molasses and sugar and/or honey to taste and stir until fully dissolved.

  4. Drink tea warm or chilled.
