Chicken Caesar Salad

Isn’t chicken Caesar salad just delicious? A homemade one is to die for with its tender, well-seasoned meat, fresh baby greens, and crunchy croutons. Chicken Caesar salad is one of my favorite salads year-round, especially on days when I have homemade dressing to spice it up!

Fresh chicken Caesar salad

Honestly, this is not a traditional Caesar salad mainly because I added tomatoes. You can leave them out if you prefer, but nice sweet cherry tomatoes really round out the flavor.

I used homemade Fresh Italian Seasoning and Caesar Dressing to make this recipe. The fresh Italian seasoning give the chicken breasts a deep, robust, and herbaceous flavor. Using dried Italian seasoning is just as delicious. In my opinion, one isn’t better than the other; the flavors are just slightly different. As for the dressing, homemade does taste worlds better than store bought, but use your favorite Caesar dressing if you’re short on time, patience, or both.

Chicken Caesar Salad

Prep Time 15 minutes
Cook Time 15 minutes
Servings 4 People

Ingredients

  • 4 chicken breasts,
  • 4 tbsp Italian seasoning, or 1 bunch each of thyme, rosemary, sage, and oregano, chopped
  • Garlic powder 1 tbsp
  • Salt and pepper to taste
  • 2 tbsp butter
  • 10 oz baby salad greens, washed and dried I used a combination of red sails, red oakleaf, green oakleaf, and romaine lettuce
  • 12 oz (341g) cherry tomatoes, halved
  • Caesar dressing
  • 4 oz croutons
  • parmesan cheese, for topping

Instructions

  1. Wash and pat dry the chicken breasts. Season them on both sides with the Italian seasoning, garlic powder, and salt and pepper to taste.

  2. Heat 2 tbsp of butter in a large skillet. Cook the chicken breasts on each side on medium to high heat for 5 to 7 minutes, or until browned and fully cooked. Take the chicken off the heat. Slice the chicken breasts.

  3. Assemble the salads by tossing the baby greens with the cherry tomatoes. Top the salads with the sliced chicken breasts, croutons, parmesan cheese, and Caesar dressing.
