This is how you really taste a rainbow!
This Rainbow Salsa is flashy eye candy that is easy to make and refreshing to taste. It’s the perfect topping for the All-Veggie Burrito Bowl, a Southwestern salad, and your favorite corn chips. Double the recipe if you plan to use it as a party dip.
- 4.5 oz (130g) Cherry Tomatoes, quartered (I used a rainbow medley, but you can use any cherry tomato you want!)
- 1 TBSP (15g) Sweet Spanish or Red Onion, chopped
- 1 Garlic Clove chopped
- 1 TBSP (15g) Lime Juice
- 2 TBSP (10g) Cilantro, chopped
- Salt & Pepper to taste
- Optional Jalapenos, chopped to taste
Mix the quartered cherry tomatoes and gently mix with the remaining ingredients until thoroughly combined.
Season with salt and pepper to taste and add chopped Jalapeno if desired.
